Induction stovetops provide more heat, energy efficiency and precise temperature control. More energy goes into the actual cooking so less heat is lost in the environment. The cooking happens thanks to the process of electromagnetism so the burners are cool to the touch. This is a boon for people who have kids around. The main thing in induction cooking is that the pot or pan you cook in must be absolutely right. The pans have to have an absolutely flat bottom so that there can be direct contact between surfaces. The cookware is also special because it must be made out of material that can be magnetized such as cast iron or stainless.
Indentation cooking at home is getting much more popular thanks to the convenience and the pot and pan industry is adjusting likewise. Companies such as Viking, All-Clad, Staub, and Le Creuset all specify which products are induction-compatible on their pans.
However you do not always know if the cookware you are buying is going to be compatible with the stove top. You can tell if your current pans can be used on an induction cook top by placing a small magnet on the base and see if it sticks to the surface. If it does, the cookware will work with induction heat. If you need to purchase new cookware, make sure it’s compatible with induction cooking.
